How to Make a Soy Latte: Ratios, Steps and 3 Variations
Get the soy latte ratio right: 1:6 for an iced soy latte, plus hot and no-machine versions. Learn why soy milk curdles in coffee and three easy variations.

What is a soy latte?
A soy latte is a latte made with soy milk instead of dairy milk. The bitterness of coffee meets the gentle aroma of soybeans, and it tastes lighter than a regular latte. It is also the plant-milk option on many café menus. With espresso or coffee concentrate and a good carton of soy milk, you can make a café-style soy latte at home.
The best soy latte ratio
Iced soy latte (our favourite)
About 1:6, the best balance of soy and coffee. For a stronger drink, use 150ml of soy milk.
Hot soy latte
No coffee machine? No problem
Instant coffee works too: dissolve 1 teaspoon in 30ml of hot water and use it like espresso.

Iced soy latte in 3 steps
- Fill a glass halfway with ice and pour in cold soy milk.
- Slowly pour the espresso over the ice to create layers.
- Stir before drinking and add a little syrup if you like it sweeter.
Hot soy latte
- Heat the soy milk on low or in the microwave to about 60–65°C, until small bubbles form at the edge but before it boils.
- Froth for 20–30 seconds to make silky soy foam.
- Pour the coffee into the cup, add the hot soy milk and spoon the foam on top.

Soy milk curdling in coffee? 3 tips
Soy proteins can form small clumps when they meet coffee that is very hot or noticeably acidic. This is a normal physical reaction, not a sign the soy milk has gone off. Here's how to avoid it:
- Soy milk first, coffee second. Let the coffee blend in gradually instead of pouring soy milk into a big cup of hot coffee.
- Match the temperatures. Heat the soy milk for a hot latte; use cold soy milk and ice for an iced one.
- Choose a lower-acid coffee. Medium-dark roasts pair best with soy milk; bright, fruity light roasts curdle more easily.
3 soy latte variations
1. Brown sugar soy latte
Drizzle 15ml of brown sugar syrup inside the glass, then add ice, soy milk and coffee. The caramel notes go beautifully with soy. See the brown sugar soy recipe on our recipes page.
2. Matcha soy latte
Swap the coffee for whisked matcha and you have matcha soy. Add both and you get the popular "dirty matcha". See our matcha soy recipe for ratios.
3. Cinnamon vanilla soy latte
Dust a hot soy latte with cinnamon, or add 5ml of vanilla syrup, for a cosy winter drink.
Which soy milk works best in a latte?
Soy milk for lattes needs enough soybean flavour and a smooth texture; thin soy milk turns watery once coffee is added. SOYCLUB Whole Soy Milk is made from Italian soybeans with 12g of protein per serving. It is rich and smooth, great on its own or in coffee.
FAQ
Does a soy latte taste good?
A soy latte has a gentle soybean aroma that pairs well with roasted coffee, and it tastes lighter than a dairy latte. If it's your first time, start with an iced version and a little less coffee.
What is the best soy latte ratio?
For an iced soy latte, use 30ml of espresso to 180ml of soy milk, about 1:6. For a hot one, use 30–40ml of espresso with 200ml of soy milk. For a stronger coffee taste, cut the soy milk to 150ml.
Why does soy milk curdle in coffee?
Soy proteins can clump when they meet very hot or acidic coffee. Pour the soy milk first, keep both at a similar temperature, and choose a lower-acid medium-dark roast to avoid curdling.
Can you froth soy milk?
Yes. Heat soy milk to about 60–65°C and use a milk frother for fine foam. Don't let it boil, or the foam gets coarse and a skin may form.
