Matcha Soy Milk: Ratio and Tips for a Smooth, Non-Bitter Cup
The matcha soy ratio: 2–3g of matcha whisked with 30–40ml of 70–80°C water, topped with 200ml of soy milk. Tips for no clumps, less bitterness and a matcha soy latte.

Matcha soy milk ratio
One iced matcha soy (about 240ml)
For a sweeter drink, add 5–10ml of syrup or honey.
How to make it (4 steps)
- Sift. Sift the matcha into a bowl. This is the first step to a smooth drink.
- Whisk. Add 70–80°C water and whisk quickly in a "W" motion with a bamboo whisk or small whisk for 20–30 seconds, until fine foam forms and no lumps remain.
- Pour. Fill a glass with ice and pour in cold soy milk.
- Top. Slowly pour the matcha over the soy milk for green and white layers. Stir before drinking.

3 tips for less bitterness
- Don't use boiling water. Boiling water brings out bitterness; 70–80°C is just right.
- Whisk before adding soy milk. Matcha dropped straight into soy milk won't dissolve fully and tastes powdery.
- Keep matcha fresh. Seal it and keep it in the fridge after opening. The greener it looks, the better it tastes.
No bamboo whisk? Put the matcha and hot water in a small jar or shaker, close the lid and shake hard for 15 seconds.

Hot matcha soy
Heat soy milk to about 60–65°C, froth it, then pour in the whisked matcha. Don't boil the soy milk, or a skin may form.
Matcha soy latte (dirty matcha)
Make an iced matcha soy as above, then finish with 30ml of espresso for green, white and brown layers. For coffee ratios and how to stop soy milk curdling, see how to make a soy latte.
Choosing the right soy milk
Matcha is delicate, so it needs soy milk that tastes of soy without overpowering it, and feels smooth. SOYCLUB Whole Soy Milk is made from Italian soybeans, all natural with no additives, and works beautifully in matcha drinks.
FAQ
What is the matcha soy milk ratio?
For about 240ml: 2–3g of matcha powder, 30–40ml of hot water and 200ml of soy milk. Use 3g for a stronger matcha taste, or start with 2g the first time.
Why does matcha clump?
Matcha powder is very fine and clumps when added straight to cold soy milk. Sift it first, whisk it into a small amount of hot water, then add the soy milk.
Does matcha soy milk taste good?
The gentle bitterness of matcha pairs well with the soft taste of soy, and it is lighter than a matcha milk latte. Add 5–10ml of syrup or honey if you prefer it sweeter.
What is a matcha soy latte?
Pour a shot of espresso over matcha soy milk and you get a matcha soy latte, also called a dirty matcha, with matcha, coffee and soy in one glass.
