Sweet without being heavy. For a sweeter drink, use 25–30ml of syrup.

Make a bottle of brown sugar syrup

Store-bought syrup is convenient, but homemade syrup has a deeper caramel flavour and you control the thickness.

  1. Put the sugar and water in a small pan over low heat and keep stirring.
  2. After about 5 minutes the syrup thickens enough to coat the back of a spoon.
  3. Let it cool, pour it into a clean bottle, refrigerate and use it up soon.

How to make tiger stripes

  1. Chill the glass for 10 minutes so the syrup clings to the sides.
  2. Coat the glass: pour in the syrup and turn the glass so it runs around the inside.
  3. Add ice to set the syrup on the glass.
  4. Pour the soy milk slowly and the stripes appear. Stir before drinking.

Hot brown sugar soy

On cold days, heat soy milk to about 60–65°C (don't boil it) and stir in 15–20ml of syrup. The caramel notes come through even more when it's warm.

For about 300ml: 20ml of brown sugar syrup, 250ml of soy milk and ice. For a sweeter drink, use 25–30ml of syrup.

Simmer 100g of brown sugar with 50ml of water over low heat for about 5 minutes, stirring, until thick enough to coat a spoon. Cool, bottle and refrigerate.
